Cheat:
When the mini game starts run directly to your left. When you see the quarterback, take a few more steps, then hit the right stick and the left stick to the right, and then run towards the corner of the endzone.
The Defence should take another second to turn to chase you down so you have some time.
When the quarterback throws the ball continue running towards that right corner of the endzone and you should score everytime.
