Cheat:
The first place is in Cheydinhal, you must be an apprentice or higher to do this.
First go to River View, then go up the stairs and there should be a door that leads to a patio.
Get on the rail (you may fall) to the left. Just jump on to the house and after that you're free to do what you want.
Note: You can still be hit with bow and arrows.
The second place is in Chorrol.
There should be a big rock next to the castle wall right next to a guard, but he can't hit you, not even with a bow and arrow.
