Cheat:
First you must have either Ebony or Daidric Armor. Then simply enchant at least 3 pieces of that armor with sheild, and your protection will go up to at least 85, assuming your a master of heavy armor.
This works great with the claymore that you probably normaly would'nt have used because of the lack of protection.
Also, your amount of defense doesn't deteriorate until a piece of armor is broken, and even then, it'll still be 74 or higher.
Also, to really have a strong warrior, use the bound sword cheat to get a weightless sword with 35 attach, and enchant the sword with a sigil stone. That cheat is all over this site, but just in case, get the bound sword spell, damage it, then repair it, unless your an expert armorer, then you can just repair it right away, then drop it. Wait for the spell to wear off. Then just pick it up, and enchant it, and there you go!
I did the same thing, and my character has 85 defense, 140 strength (I enchanted the remaining pieces of armor with strength) and a claymore with an enchantment of 30 drain health, and 35 attack points, plus whatever attack bonuses I got from the extra strength.
